Similar to Sublimes, Trader Joe's Cookies 'N Cream Ice Cream Sandwiches consist of two Cookies sandwiching Ice Cream. But instead of chocolate chip cookies, we used two, double-Chocolate Cookies flavored with rich cocoa powder and loaded with decadent Chocolate Chunks. Between these two Cookies is a generous scoop of ice cream that's blended with a subtantial amount of chocolate Cookie crumbs. The Sandwiches have a soft bite straight out of the freezer (like their sibling), and the creamy filling is a wonderful contrast to the chewy, Chocolate-Chunk laden Cookies. In a word, we might call this frozen treat "sublime"—but that just might be confusing!
