Directions Menudo/Afritada Recipe: 1 pouch (30 g) Mama Sita's Meat Stew (Menudo/Afritada) Mix. (Makes 5 servings) 1 cup (250 mL) water 2 tbsp (30 ml) cooking oil. Menudo: 0.77 lb (350 g) diced beef. 0.33 lb (150 g) diced beef liver. 1 cup (70 g) diced potatoes. 12 cup (70 g) diced carrots. 2 pcs (80g) diced bell pepper. 12 cup (35 g) raisins. 1 cup (60 g) cooked garbanzos. Afritada: 1.1 lbs (72 kg) chicken cut into serving pieces. 12 cup (70 g) cubed potatoes. 22 cup (70 g) cubed carrots. 2 pcs (80g) cubed bell pepper. 72 cup (85 g) green peas. 1. In a bowl, dissolve Mama Sita's Menudo/Afritada Mix in water. 2. Fry potatoes and carrots in hot oil & set aside. In the same pan, stir-fry meat until golden brown. 3. Pour in dissolved Mama Sita's Menudo/ Afritada Mix. Cover & simmer until meat is tender. Add hot water, as needed. 4. Add fried potatoes and carrots, then the rest of the ingredients. Simmer for 2 minutes. Serve hot.
